Here at Buon Gusto Farms we have been substituting Olive Oil for butter or shortening every chance we get! It adds great flavor and you get all of the health benefits of fresh Extra Virgin Olive Oil. We use this chart for almost every situation.
We like to use California Coastal for most of our baking because the taste is more mild and buttery, but you can use flavored olive oils if it works with your recipe! The only case we’ve found we can’t use olive oil, is if the recipe needs you to cream the butter for cookies for example.
